change photo text in book module

I'd like to change the color and size of 70 labels for images in the book module.  They're at the bottom of the page and say 'photo text'.    Is there a way to select all photo text at once and change just once or do I have to go through and change them one by one?

Go to the menu in the book module and choose:

Edit >> Select All Text Cells

Whilst selected go to the type panel on the right and choose a color.

Thank you so much!!

Any way to get all of  them to center?   I had them to one side originally.

Select the text cells again and click the second button (align center) at the bottom of the Type panel.

I couldn't get that to work tho I can see how it should.   But somewhere I learned that the Cell padding works to get them back to center (I had them way right which is probably why the center button doesn't work)

But ...  Now I can't get the original fix  "Select all text cells" to work.  The Type panel is inactive.  I want to change them all to 100% opacity, but no clicking on Type panel has any effect.

I wonder if it's because I followed some instruction online today and changed from "Custom" to "title-sans serif (edited)".   This is soooooo depressing -- and time consuming.

Yes, if you are choosing a preset like sans-serif then you are changing the layout. That will also apply to all pages when you click auto-layout.
