Since updating to the latest version of Lightroom any image I click on in develop instantly comes up brighter on the screen than it original raw file. It's not a preset or auto edit, I can't workout where this is coming from please help

Yes toggling soft proofing off and on doesn't change it the same thing happens even if soft proofing is off

I read on this forum that when you change to a new photo you see for a short moment the embedded jpg-file and only after that the photo rendered in LR.

Why would the rendered version be so bright and washed out tho, do you know a way to stop this from happening

You have probably activated a setting in the camera that underexposes the embedded jpg, it may be called a picture style or similar. This setting may be written to the raw file as well, but in a format that Adobe applications don't understand, so they ignore it. LrC displays the image as it was exposed in the camera.
You can turn this setting off in the camera, or possibly use a camera matching profile if Adobe has provided such profiles for your camera. You can then apply this profile on import.

Unfortunately, this is not the case as it is happening to my entire catalogue that contains files 5 years old and present

Does disabling the GPU make any difference?
Preferences > Performance > Set Use graphics processor to Off.
