In the export dialog box, I would also set my DPI or pixels per inch to 218, as that is what the 5k monitor pixels per inch count is.

Setting a PPI for the image will not make any difference.

Digital displays use 'Pixels'. So you can set 1PPI or 300PPI, the image is still the same pixel dimensions (eg.5120 × 2880) and will display exactly the same, regardless of the PPI set in the export dialog.

And is the 5K monitor 13" 17" 24" or 27" or something else? Now what does 218PPI mean for different size screens?

Any PPI value is really only EXIF data that helps determine how large a Print (on paper etc.) would appear.

Next to the suggestion above of making sure you export exactly at 5120 × 2880 by first cropping to 16:9 aspect ratio and then using 5120 long edge scaling in the export panel Image Sizing section, you should also use the Display P3 color space (the iMac 5k has a P3 gamut) and you should use standard output sharpening for Screen. Choose any jpeg quality above about 80. Quality 100 is way overkill and the difference is not really possible to see.

A photo cropped and re-sized to the screen pixel ratio and dimensions (eg. 5120 × 2880)  will display 1:1 and should be fine to exactly fit the screen.

A smaller image (eg, 2560 x 1440) may expand to fill the screen depending on 'wallpaper' display options.

"Quality" is dependent on JPG compression setting and probably will not be a major factor for wallpaper. Try some different 'Quality' options and see which is 'best'.

So try some experiments.
