hey guys, I used to use + and - to move sliders, now it's + and >, any idea how to change it?

This hasn’t changed. The shortcuts are still, as always:

 

To change which option is being edited, press the , (comma) or . (period) keys. This is easier to remember and look for using the keys’ uppercase labels, which are < and >  for “previous” and “next” respectively.

 

To change the value of the current option press the - or = keys. This is easier to remember and look for using the keys’ uppercase labels, which are - and +  for “minus” and “plus” respectively.

…which also include how the arrow keys can be used for those shortcuts.
