When doing a sort with Capture Time Lightroom takes the metadata from the "Date time digitized" field. However I have two cameras, one with the correct time for the location and one with a corrected time zone update of two hours.
When I use capture time to sort it uses the original time digitized field, which doesn't use the corrected time zone. Any way to have the sort go by the "Date time original" field which can be corrected for the time zone? I don't see "Date time original" in any potential metadata search fields.

Normally, LR's notion of "capture time" comes from the metadata field EXIF:DateTimeOriginal when a photo is imported. (LR is quite buggy when images without that field are imported, but that almost never happens with digital cameras.) The catalog capture time is updated when you do Metadata > Edit Capture Time, and that capture time is written out to EXIF:DateTimeOriginal when you Metadata > Save Metadata To File.
I just did a simple test in LR 7 (Classic) and observed that LR is correctly sorting by catalog capture time, not by Date Time Digitized when that field differs from capture time. Two screenshots showing that:
I'd like to track down what you're observing and file a bug report if necessary. Can you post similar screenshots? Put two photos that aren't sorting properly into the Quick Collection, and select the EXIF tagset in the Metadata panel, and show the results of sorting by capture time and the contents of the EXIF tagset for the two photos.
Also, please do Help > System Info and report the exact version of LR and Mac/Windows.

So I have shot of maple leaves on a Canon G10 and another on an iPhone taken at the same time. The Canon camera was two hours off when I shot it. I brought the shots into Lightroom and the changed the G10 time to match the iPhone. I wanted to do a sort so the shots from different cameras are all together. Sorting by Capture Time doesn't achieve this though.
