Font suggestions for Lightroom 5 Books

I am looking for recommendations for readable fonts for pages of text in Lightroom 5 Books.  I have tried out several of the fonts, but I know that it will look different on a printed 8 x 10 page compared to on an iMAC screen and I would appreciate some experienced guidance.

I will have text for captions under photographs, but also full pages of text. I am considering using Baskerville for text captions but I think I need something that is easier to read in paragraph form.  With the suggestions, I would appreciate guidance about the minimal size I should go with for certain fonts and leading suggestions.

I don't want to use up too much space by going with font size that is larger than necessary but I want to make sure that it can be read easily.
