By unsyncing collections, will I free up space?

Do you mean unsyncing Collections from Lightroom Classic to free up space in the Cloud or on a Mobile device?
Lightroom Classic only syncs lower resolution Smart Previews to the Cloud and these are not counted as part of your Cloud Storage quota.
Could the Cloud Storage usage be taken up by photos taken on a mobile device?

Because it is unchecked, does this mean orginals are going to the cloud?

No, most of my images are imported via Lr Classic not so much from my mobile device.

Lightroom Classic can only sync Smart Previews to the Cloud (i’m not a Classic user but the option you refer to is for local editing within Classic’s catalog).
Do you know how much cloud storage you are using and how much you have?
