When editing text, or moving it in the canvas when using multiple canvases this happens/ to fix it I have to hide and then unhide the layer.

You might try GPU troubleshooting and see if that helps (update driver or disable GPU):

Go to Preferences > Technology Previews... and enable “Older GPU mode (pre 2016)” - Restart Photoshop. Does the problem persist?
