Change Open with setting in PhotoShop 25 the default settingsg for opening my photoshop created files is Acrobat. The setting automatically resets to Acrobat when I change it.

i did that too, and it wiped out my older versions of photoshop and did not fix the problem

Open With is not a Photoshop setting, it is a Windows setting. Files asssociated with Photoshop are usually set when Photoshop is installed but can be taken over when another app installs.
To change it in Windows, use Settings > Apps > Default Apps > Choose defaults by File type then navigate to the file type (e.g. PSD) and associate the Photoshop application with that file type.
Edit - Apologies - I've just noticed the first post was referring to this on a Mac which makes my post invalid for this thread. I'll leave this here though in case a Windows user has a similar issue.

It's similar on macOS, Dave.
Open a Finder window.
Select a file > File menu > Get Info.
In the Info window, click the ">" symbol next to “Open with.”
Click the pop-up menu, choose an app > click Change All.
