I use the home create menu but everytime I open photoshop and illustrator I get a gray screen. I have unstalled both apps, down grade verisons, and try that "Use legacy "New Document" Inferface option. Nothing seems to work. I do like using the create new doc, but I've seen people do the don't auto show the home screen. I don't what to do.

You didn't say which versions of PS and AI you are using but only Photoshop 2020 (21)  and Photoshop 2019 (20) work with macOS Catalina.

Have you tried Reset Preferences on Quit? It's in the bottom right of my screen shot.

Are you asking why the Home Screen isn't visible in Photoshop with no documents open? Is it enabled in Photoshop > Preferences > General > Auto Show the Home Screen?

What version of Mac OS are you using?
