I want to create the effect of trype on a plain-coloured shape being cut out to reveal an image below.

Right click on the type layer in the layers panel and in Blending options turn Fill to 0% and Knockout to shallow

Aha! I have it!
I spotted that I didn't have the image as the background.

If you are knocking through to an intermediate layer below the shape (rather than the background as I showed) put the type layer and the shape in a group. The type blend settings are the same (shallow knock out and 0% Fill)
