Are you using any kind of drawing tablet?
I would try a reset of the Pen Tool and if that doesn't work a reset of the Photoshop preferences.
Reset the Pen Tool by right clicking on the Pen Tool icon in the Tool Options bar then click on Reset Tool

This sounds like a display issue. The path is there, but you can't see it...
That usually comes down to the GPU and it's driver, so if Jeff's tool reset makes no difference, try turning off BPU acelleration in Preferences, and enabling Older GPU. (I am on a Windows 11 system right now, so can't check what you are seeing in Preferences.)
What hardware is your MacBook Pro using?

Thanks for the suggestion Trevor. I will also keep that in mind when it decides to act up again and update post then.
As for hardware my MacbookPro is connected to an Apple Thunderbolt 27" display and a Wacom Intuous Pro M tablet.
