Since the upgrade to the latest 21.2 there are some issues with the pen tool options in the tool bar at the top.
When launching PS the pentool panel is active and I can make changes to the path color and size. However, when opening a new document, the pen tool options are grayed out and the pen tool does not funcion with the color/size settings I'd previously set.
I've included an image to show the issue. I'm running a 2010 Macbook Pro with High Sierra 10.13.6
Help would be greatly appreciated, thank you all.

Go into preferences and check to see if your GPU is been detected and that OpenCL is enabled

Ged, thanks for the info. When I select the Advanced Settings the "Use OpenCL" is grayed out and cannot be selected. For some reason it was active in the previous version of PS. I had gone back to the previous version of PS yesterday, then in the evening noticed there was an update to PS via the CC Dashbboard.
When it updated it replaced the previous version which I had reverted to with the latest version, so now I'm back to square one. I also noticed all of my brushes went missing but thankfully I had backed them up before.
So at this point, it looks like I'm going to have to use the pen tool as it is without the settings that would help my workflow. The gray path line easily gets lost on some imagery, but such is the case with Adobe updates; always having to find workarounds to features that get disabled.
Thanks again for your reply and if you might have any other ideas, I'd be open to try them out.

It's an issue with this update, I had the same problem on my work PC, I have a 2018 Nvidia GPU in that and Photoshop 21.2 won't detect it, reverting back to 21.1.3 fixes the issue.
I reported the issue here, so hopefully Adobe will address it in the next update
