For one, don't use too large a brush. I usually use a brush just large enough to half overlap the background and half overlap the hair. If there are sharp edges, don't paint over those - only paint over the fine detail - half on, half off. Most videos make Select & Mask more complicated than it needs to be for most uses. If you are just cutting out a person, first select them with the Quick Selection tool, then in Select & Mask do the above over the edge of the hair. Output to a new layer with a layer mask. The results are usually excellent.
For two, you can always revert to the old Refine Edge by holding down the Shift key before clicking the Select menu and choosing Select & Mask. (Make sure you have an active selection before you try that.)
