For some reason my layers are in RGB mode but appearing in Grayscale, I can't manage to under or fix the issue. Please help!

Well, it looks to me like all the Channels thumbnails are identical - in other words, it actually is a monochrome image.
I think maybe we need to see the entire Photoshop workspace, with the image open.

I attached the link for my photoshop file if you want to look at it ? It's weird because when I create a new layer its in colour, just the previous layers I've worked on I can't get out of grayscale....

Please provide the actual file.
You apparently created the Layers without any saturation so they appear gray.
You can colorize them; with the Shape Layers (Rectangle and Ellipse) this would be especially easy, the plain pixel Layers you could colorize with the Layer Style Color Overlay or Clipping Masked Layers (set to the appropriate Blending Mode obviously).

I don't use cloud storage, and I'm stumped as to how I would download that file. There must be something I overlook.
But from everything I can see so far, this really is a black and white file. If the red, green and blue channels are identical in Photoshop, then that's it.
