To put the text under the shape, select the text with your Direct select tool. You'll see markers for "in" and "out" text flow boxes. Very small next to those boxes are lines - wait until your cursor shows you an icon with a little arrow and bar (I call it a baby's nuk nuk!). You can then move the text around the path ( (it'll look upside down). When you get it under your ellipse, you can also grab a very difficult-to-see center bar, which you can drag IN to your ellipse. That'll move your text INTO the path - but it'll be in the correct reading direction. LASTLY, use the Character panel to set your baseline shift to negative numbers, which'll move the text outside your path, in the correct direction, on the bottom.
Clipping paths will ONLY show where there's opacity defining the clipped layer. No fill will give you total transparency in the fill area - but if you have color on your stroke, your clipped upper image shows through the opaque stroke. To see your photo through all the information, have opaque fills defining the visibility of the clipped layers (strokes may or may not be necessary)

I was able to figure out how to make the text right side up and underneath the shape by following your direction. Thank You.
As for the clipping mask, I'm still trying to understand how they work. I don't fully understand why the situation I explained in my video, my image only showed through the 'stroke' portion of the shape when I initially created the clipping mask.
I'll have to re-read your explanation to see if the answer comes to me. Thank you

Think of clipping masks as a way to "shape" the layer it's clipped to based on its opacity---like a "punch out", if you will. Take note only the clipped mask/shape's opacity and blend mode come into play, *not* based upon grayscale values like in a traditional layer mask.
