It is impossible to right click and change label color on caption track item. It seems to only be possible by selecting captions along with an audio or video track item and then right clicking and changing lables.
Sorry, we don't currently support contextual menus (right-click) for Caption track items/segments. You can select Caption track items/segments and then go to Edit menu > Label.
