Color management issue with Sony Slog3 files

I haven't even written my response to this post, but I already regret it because I know that no one will have anything of value to say that will actually help -but here it goes anyway. 

I've been in this situation at least 10 times over the last year to 18 months where: 

I shoot the entire project in SONY Slog3/ S-gamut3.cine at 4K/24fps

Import the footage. 

Override the color space to SonyS-LOG3/ S-gamut3.cine

Highlights are completely blown out, so I apply Tone Mapping (by channel). 

(at some point over the last 18 months, this SUDDENLY worked and my footage looked GREAT)

NOW.. again. I'm having the SAME issue where the footage looks like complete GARBAGE. 

Regardless of how much I adjust the Tonemapping exposure, the highlights are still BLOWN OUT and the image is insanely OVER SATURAED. 

So... I swap the color space back to Rec709 and apply a QT Gamma Compensation curve LUT to the footage and WOW -the blown out highlights are gone and the image is no longer oversatured and noisey -BUT -the colors are incredibly FLAT. 

Staring at exports from BOTH settings -trying to choose whether: 

1) I do this the "correct" way by overriding the color space back to SONY S-Log3/ S-gamut3.cine and pull the tonemapping exposure WAY down

-or- 

2) Do this the "incorrect" way and keep the Rec709 media color space, add the LUT -and just force myself to deliver unimpressive, desaturated footage. 

Oh. I shoot at night. So I'm always shooting with 12800 ISO between F1.4 and F4. 

My footage has looked great for a number of months over the last 18 months -and suddenly, I'm back to this MESS again. 

I cannot express how INSANELY frustrated and annoyed I am at this point. I've said it a lot over the last year, but I've held out "hope" that Adobe would stop with the BS, but they refuse. I'm sick of paying the money for a product that is UNRELIABLE and rarely works as advertised. This is the LAST chance I'm giving Adobe before I completely switch to Resolve. I'm sure I'll have problems with that software too -especially since I am not a professional colorist, but if I can get a CONSISTENT LOOK in my video (after shooting consistently the SAME way for years) then I'll be forced to head over there. 

I edit on a M1 max. 64gb RAM. 2TB SSD.

Ok. So I believe I've figured out the "workaround" for the issue described above. 

1. Use Rec709 media color space. 

2. Apply QT Gamma Compensation curve

3. When exporting, use the "SDR Conform" option in the "Effects" tab in the "Export" screen. 

4. Colors are still a bit flat, but the blacks are saturated and the footage looks 100x better (still not getting the COLORS I want and that I bought my camera SPECIFICALLY FOR.. but at least now, I can deliver this media and not be embarassed).
