Macbook HDR Workflow and Color Correcting

I’m attempting to move to a fully HDR workflow in Premiere Pro. I’ve got everything working correctly except I can’t figure out how to properly display the footage in the program monitor so I can color correct. I can import and export the HDR footage successfully and it looks great and in full HDR on the output. Why does the video still look slightly hot in the program monitor in Premiere Pro? I assumed if I was shooting and working in the correct color space in premiere pro and on a macbook that is capable of displaying HDR, I would be able to work end to end in HDR. Assuming wrong?
Editing on a 2023 MacBook Pro 16” with an Apple M2 Max chip and HDR display
Shot on an iPhone 14 Pro Max, 4K HDR, Rec. 2100 HLG color space and HEVC 10 bit 4:2:0 codec.
Premiere pro working space is set to Rec. 2100 HLG with Auto Tone Map Media checked
Export using HEVC - Match Source - HLG preset
