Has anyone with a GTX graphics card found better stability, workflow, and rendering with switching to the Creator or Studio drivers vs the regular game drivers? I'm curious to make the plunge, but since I can only trust PP 2017 and can't use any newer version of Premiere Pro because of the instability issues.

Which instability issues have you had?
As to the drivers I just always check for the newest driver for my 1060 from the main Nvidia site.

I've always been using the GRD drivers with my 1080 Ti and they all seemed to work fine. With the last version of Premiere I had some major performance issues and tried Studio and and Creator drivers. The GRD was the one to fix the problems.
So, I can't give you a clear answer on that, but the GRD Drivers work fine and just make sure you keep them up to date.

The creator driver has not been updated since it came out.
I moved on installed the latest 430.86. No issues.

I'm also curious about the Studio drivers because they are said to enable 30-bit color.
nVidia states that these drivers offer better performance for creative users.
Has anyone tried them yet and can offer their experience?

Notice any difference in smoothness of gradients, like sunset scenes on a 10-bit display?
