Question

Overwriting old keyframes

I have to scroll down all the way to opacity, then select and delete the mask to replace them with new keyframes. Is there a faster way of going around this?

Also, how do I close every other effects except opacity?

There are no shortcuts for what you're asking about in Premiere. You may want to consider doing these tasks in After Effects if those shortcuts are important to you.
