See through Text

I understand how to make a title with black background where the text allows the video layer below shows through. my question are 1) is there a way to do this with a white background? all the tutorials i've found online only show it with black. 2) is there a way to do this with the black back ground and have a white stoke around the text. In my attempts, all the stoke does is extend the white text which is the see through. any help is appreciated.
