5.1 surround with stereo tracks

I need to deliver a render that has 5.1 surround (6 tracks) plus 2 track stereo. I am having difficulty figuring out the correct way to do this in PP 2017.

The sound mixer delivered 6 tracks mono for surround and L and R tracks for stereo.

How do I set this up in a sequence and have the L, R, C, LFE, Ls, Rs tracks get sent to the right place and then have to the two stereo tracks pan L and R?

I've tried multichannel but I get 8 tracks of surround and not sure where to position the stereo tracks with the puck. If that is correct at all.

If I click on Clip > Modify > Audio Channel I don't see a way to assign tracks to different channels.

I found this video which is close to what I am trying to do, but was confused because the audio mixer doesn't seem to allow channel assignments in 2017

I took a stab and selected multi channel and added 8 tracks setting the first 6 to 5.1 and the last two to mono. I found the channel assignments and ticked the box for each individual channel to match only L,R, C etc, The first L mono track is shown on top left. Is this correct?

It looks like the OP had a good start ... although it can depend on what the service you are delivering to wants. From quite a few of the posts about this sort of thing here, frequently the service wants a stereo pair first, then the 5.1. Each different request requires a different channel assignment setup.
