Which one did you submit that got rejected? The first one or the original that you just posted? If it was the first one, I would assume it is because of the oversaturated colours. When it comes to post processing, minimal and inconspicuous is best as stated in Adobe's Requirements for Contributing:

General editing tips

Do: Process your images subtly — clean color images that are in focus sell well. 

Do: Check out our Photoshop tutorials, Lightroom tutorials, and Lightroom Classic tutorials covering everything from adjusting an image’s tone and color to sharpening.

I personally don't see much wrong with your second posted photo (original). (And I do think it is well composed and interesting subject.)
