I would like to buy an image, with an extended license, for resale as 'print on demand'.
Does an extended licence allow that image to be edited in Photoshop? In order to create different versions of the original?
(For example if I were to edit the colours or add some text?)
Or would editing the original image mean that I would need to license each edited version of the image too?

You can modify the assets as you wish with very few limitations, as laid out in the licensing terms. The limitations are in the political and adult areas.
Only editorial use assets cannot be edited, except for cropping.

(Disclaimer: As always with licensing, this is my interpretation of the rules. I think they are correct and advice is based on reading and interpreting the licence terms and on fair use for both the buyer and the artist/stock company, but I cannot rule out that my interpretation is wrong.
