I think you have a Z depth issue, try to check your comp from a top-view camera and be sure your plants didn't go behind the background, so try to push the plant-forward and scale them down if required

Adobe After Effects (AE) does not rely on the GPU for its core functionality. It only uses the GPU to accelerate previews and a few other things. First, if the price is your main point to select the app you want to use, I think there are a lot of good apps in the market, that cost you less or sometimes are totally free why you chose adobe then? second, if you didn't get any crashes for 8 years, so believe me you are a lucky man 🙂 Regarding your issue, most probably it's a font issue, try to change the font and test it.

In the latest version of after effects V23, you can simply export your project as H264 file directly from after effects so no need to use AME, even you can take the benefit of multi-core render inside AE

try to transcode your video on adobe media encoder before you imported it to after effect, sometimes even if you see that video playing fine on any player it will not works fine on AE, so transcode your video using AME to ProRez 4.2.2 .MOV then test it on AE

Actually, you get this problem because you animate both the offset and the rotation at the same time, and after one minute the offset value will jump to a bigger number and that affects the rotation value, this is why you start to see this increasing in speed

As I know if you use the same font you should get the same in AE, anyway since you import a lot of text from illustrator try to use this plugin https://www.battleaxe.co/overlord it allows you to import the illustrator shapes and text in a better way.

From the video you share, you set the keyframe to 250+ rotations so really it's a very big number, and no matter what settings you use you will not get a proper MB at this level, so try to reduce the rotation value to some reasonable value like 10 or 15 and set a proper speed graph
