How can one stop email spam  (that have nothing to do with Adobe) coming from Adobe Ireland?

If you're getting spoofed / bogus e-mails, report it to Adobe.

Since getting replies from Adobe and Adobe phishing (who said they were legitimate Adobe contact attempts), the spams have magically stopped (were easy to spot as I recieved 3 identical spams each time). Except I am now suddenly getting lots of spams (vaguely similar to the adobe ones) that are not from Adobe. So the fun continues. Thanks for your help people!

Bear in mind ANYONE can put ANY email address on what they send. So ANYONE can send spam from anything @ adobe.com. Email addresses don't prove anything at all, wish they did.

Without seeing the exact email message you are getting, like a screen shot of it, no one knows.

Not sure why you think these emails are coming from Adobe Ireland as the return path is 

deutschland.de

 

Setup a Filter to Block and Delete them either in your email client (program) or at your email providers website.
