proper way to edit long videos into clips for future videos + issue with choppy video in timeline

Hi all,
I'm trying to find the best way to edit long videos into shorter clips and save them for use in future projects. I’ve searched on Google and watched some YouTube videos, but they seem too focused on immediately creating a finished video, rather than organizing clips for later use.
Here’s what I’m trying to do:
I have several videos from my drone, all taken from the same location over a period of time. I want to go through each video, extract the good parts, and save them to a folder for future use. I haven’t been able to find a good tutorial that explains this process.
Also, when I mark the in and out points of a clip and drag it to the timeline, the playback in the timeline is really choppy, but the source window plays smoothly. Does anyone know why this happens or how to fix it?
