illustratorの単体プランからCreative Cloud コンプリートプランに変更しようと思っているんですけど、Creative Cloud コンプリートプランにAdobe Stockがついてくるプランしかなく、このAdobeStockを無料で解約することは可能でしょうか？よろしくお願いいたします。

プランの変更のみでしたら、こちらを参照頂き手続されるのがよろしいかともいます。

確か、Illustrator単体プラン→（Adobe Stockのない)コンプリートプランへ変更できたはずです。
もし、コンプリートプラン＋AdobeStockのプランしか表示されない、変更してしまったということであれば

チャットサポートに相談してAdobe Stockのないコンプリートプランへの変更についての相談が必要ですね
