Can't change default setting for Reader DC

Environment:
Win 10
Adobe Acrobat 9.5
Adobe CS5
Adobe READER DC
I've been tasked with helping a colleague with a Reader DC issue (subscription -NOT FREE). The software is set as their default PDF viewer. I need to change that back to my Adobe Acrobat software the normal steps I've taken to change the default settings aren't working.
Steps I've taken:
I've tried right clicking on a pdf file -> Properties / Opens With: set to Adobe Acrobat Reader. I select CHANGE: asks me if I want to "Keep using this APP: ADOBE ACROBAT" -> I select YES and nothing changes.
Verified the default program for PDF was Acrobat - didn't have any impact
Switched Default in - pdf file -> Properties / Opens With: to MICROSOFT EDGE which changed the default software setting. Then changed it back to ADOBE ACROBAT but it's still showing READER DC.
Both these products have been around for some time now - I can't be the only one with this issue...
