That's a really good question to be asking and most teams aren't fully using what's available. Before we can answer it, we need a few questions to narrow it down:
• What spreadsheet are you starting from, Google Sheets, Excel, Numbers?
• What's the finished Adobe document supposed to be, is it a PDF report, a filled-out form, a signed contract, a designed layout?
Please try using the Acrobat AI Assistant: its available on mobile, web, and desktop. Open a PDF that contains tables and you can ask it things like "summarize the rows where status is overdue" or "draft a paragraph based on this data."
