Extract field data from completed Adobe Sign document

I send to-be-completed forms (properly formtted with field names, etc) to cusotmers via Adobe Sign from within Adobe DC Pro.  When the customer receives the form via email, fills it out and signs it, it is completed, locked, and sent back to me.  Once I have the completed and locked form, I need to extract the date data the customer entered to each form field.  When I have the completed form open in Adobe ProDC, all of the tools are greyed out.

How can I open a completed (and locked) form in Adobe DC and extract the data?
