There is a script that will acomplish this handily, but it does turn the text into outlines in the process. Text Block script

You just select your text and run the script - it prompts your for width and spacing, and then creates the block.

In addition to what Ton said, I believe you will wish to have Use preview Bounds ticked (Preferences) along the Outline Object effect (under Path).

Change the size of each word to make them the same width.

You have probably more control when you use one of the variable fonts
