Here's the problem:

Runnming both OSX and Windows in the same system is very problematic. Adobe now no longer supports CUDA at all in OSX (nor does Apple itself support CUDA in any version of OSX from Mojave onwards). And any version of Windows that is running in a virtual environment on a Mac must comply with the OSX support requirements. And Adobe has completely disabled OpenCL support in all Windows versions of Premiere Pro if an NVIDIA GPU is installed. Worst of all, if your iMac has an NVIDIA GPU installed, it will almost always have far too little VRAM to even enable CUDA or OpenCL support at all in Premiere Pro. As a result, Premiere Pro will be permanently locked to the software-only MPE rendering mode in your system no matter what.

First, you need to know what brand/model video chip/card you have... then you need to be sure you have a compatible device driver

Do not count on Windows to be fully up to date when it comes to device drivers
Go to the vendor site to be sure you have an updated driver for your graphic adapter

There are also intermittent reports that the newest driver is not always the best driver due to driver bugs or compatibility issues, so you MAY need to try an earlier driver version
