Adobe Acrobat Pro DC - Missing "Who needs to sign and Email fields"

Hello,

I am attempting to create a PDF digital consent form using Adobe Acrobat Pro DC – and when I right-click my text field, I do not see two fields that I need to include.  Can someone please provide the steps to include a “Who needs to sign this field?” and a “Signer’s Email” to my Text Field Properties form?
