La dernière version de OS/X Mojave ne supporte plus les applications 32 bits, or certaines applications Adobe sont encore en 32 bits.

Hi,
This is bad, but it's the way of life. Adobe Encore is EOL since CS6 and will not be continued and there will be no 64 bits version. As of my knowledge this is not accountable to Adobe but to the original developer who did not extend the license agreement with Adobe.
If you need a software to create DVDs or Blue Ray disks, you should look for a third party program or you need to keep an old system up and running. You may also switch this to Windows if that fits better you needs. Your Adobe CC All apps subscription allows you to run the programs under Windows too.

As of CS6, Encore was 64 bit. Old and EOL, but still works for me on 64 bit Win10.

I suppose, I completly misread the the post. I will move back to Adobe Creative Cloud, as the OP is not talking about Encore but about programs still at 32 bits.
Up to my knowledge, all software has been moved to 64 bits on the Mac, so any current program should work.

I use Creative Cloud on an iMac running High Sierra.
When i list applications, i see a few Adobe applications that are not 64 bits (ex : Notifications).
I do not say that Lightroom and Photoshop are not 64 bits, but probably marginal applications. But what is the consequence if they cease to work ?
These marginal applications are installed by the Creative Cloud package. I have not installed them explicitly.

Correct. Encore CS5 and 5.1 were still 32 bits.

It doesn't matter whether it's 32 bit or 64 bit. Only new apps work in Catalina. CS apps will never be updated. Not even older CC apps. Current CC apps have issues for early adopters. IF YOU WANT TO RUN CS APPS DO NOT UPGRADE TO CATALINA.
