Acrobat displays pdf in CMYK instead of RGB

I've used Acrobat for many many years, but now when I convert a jpg, whether I have embedded the profile or not, it displays as CMYK instead of RGB. It never used to do that so I am not sure how I can stop this. I am also not sure if it's converting the actual file into CMYK or not. Can anyone tell me what is going wrong? Thank you.

It's probably a colour management issue, but not necessarily that it is CMYK. It's unlikely it would have converted (though a CMYK JPEG would make a CMYK PDF).

It's not a CMYK jpg. It's definitely RGB and I've checked it a few times. Do you know where I can change the color management to make sure it's using RGB? I've checked everywhere I can find and see that CMYK is turned off and RGB is the same profile.

How do you know it is doing that? What version of Acrobat?

I am not sure it's CMYK but it looks just like it when I compare it to a CMYK version. I didn't change any preferences so am not sure why all of a sudden it is doing this. I use Adobe Acrobat Pro DC.
