Easiest way to change background on complex images (example included)

I restore old prints to sell.


I make the background white on botanical prints like the attached botanical print by using the paint bucket tool & tidying up with the clone stamp tool set at 1-4 pixels,  drawing around each part of the image whe closeup.


It takes about 3 hours per image. The set has about 180 images so I'm looking to save time.


I've tried the object selection tool and background removal tool,  but it's not precise enough.


I've tried removing the background entirely with the bg removal tool but again, not precise enough.


Is there a better way or do I just need to live with it taking a few hours each time?


I've been using photoshop for a few years on a daily basis but maybe missing something.


There doesn't seem to be a guide anywhere for cutting out something like this & I've searched a great deal.
