This is a very good explanation I found on YouTube, and it's helped me a lot. I'm uncertain about this lady's other content, but as for this tutorial, I really like what she's doing.

Or, you could answer the question here so we don't have to rifle through "the docs" for such a seemingly simple (and should be obvious/intuitive but isn't) function of the program. Of course, the docs are where answers are held; the point is to save time, not navigate an already disfunctional system. Lord.

‌In Acrobat use Tools > Prepare Form and add text fields.
