Pre-filled text disappearing from PDF when requesting E-Signature

I have PDFs with editable sections that I fill out and then send to someone else for a signature. I have done this before with no issues. Now when I go to request the E-Signature, all of the information in those editable sections disappears as well as removes the boxes to fill in and place for signature. I need to be able to send these documents with the information that I already filled in. If I back out of e-sign it will still have all the information, just not if its sent for the signature.  I have made sure I am updated to the newest version of Adobe Acrobat Pro, newest OS for my computer, disabled new version of Adobe, enabled new version, tried multiple documents, tried online Adobe Sign, checked all settings and security. I cannot figure out what is different and why it won't work now. Any ideas?
