I wonder when Adobe will update Acrobat so you can select text like every other program out there... By this I mean double clicking a word, and holding down on the second click, and then dragging which will highlight word-by-word. This is a universal way of selecting text, but Adobe doesn't have it for Acrobat. Odd.

Hey there!
If I understand your requirement correctly, then I guess what you are referring is a already a default behavior of Acrobat. Selecting one word by double clicking will highlighting the word, and then dragging it across the page will select the rest of the words until you wont leave it. That's how it works in other documents, so as with Acrobat.
Is it doing a different task for you? While selecting any text, make sure you have chosen "Select Tool" from the menu bar at the top.
Let us know if it still doesn't work.

If you triple click it doesn't work. Most of other software has it so it works that way. Like clicking on the text on this webpage (atleast in chrome).

I have the same issue as @Griffy. I have Adobe Acrobat Pro for mac.
I'm using the select tool, but it only selects one word when i double click and drag.
Is this a limitation for mac users?

I am on windows and it does not work as expected for me either. Double-click and Triple-click behavior in Adobe does not match the standard behavior in other software, such as browsers, editors, etc.

Double clicking does not allow me to select the current word, then drag and select additional words. It only selects the current word.

I don't think you read my whole post. Double-clicking to select a whole word works fine. But holding down on the second click, then dragging the cursor left or right to start selecting other words does not work. That is what I am mostly talking about. Still doesn'rt work for me in Acrobat. It's a universal functiont hat works in documents, browsers, etc. Odd that Adobe wouldn't impliment this.
