There are times when what the user types into a text form field doesn't fit in the fireld and a scroll bar appears.
It is very important that all of the text is showing because the PDF will be printed.

My first preference would be for the form field to automatically expand, but I don't think that is an option in Acrobat.
The only option in the link that would work for me is to add an addendum.
I can't figure out how to do that from the explanation.
Does anyone know of a youtube video that explains how to add an addemdum or where I could find a more detailed explanation?

This doesn't exist in Acrobat. They are using some other application, probably LiveCycle Designer.
The easiest solution is to set the font size to Auto and disable the Scroll Long Text check-box under the field's Properties, in the Options tab.

As mentioned before you can't do this with Acrobat but with LiveCycle Designer, which nowadays is called AEM Forms Designer. This tool allows you to create fully dynamic forms based on a XML driven technology called XFA. Those forms are also saved as PDF files but are not like regular PDFs and don't work with mobile devices or and have limited compatibilty with PDF viewers other than Adobe Acrobat/Reader. AEM Forms is an enterprise product so individuals are not able to license it.
