How can I turn an image into several pieces, that is, into poster-style mosaics.

You can't do that in Adobe Acrobat Reader Mobile (beta) where you posted, but you can do it in Adobe Illustrator:

Select the images, then choose Object > Create Object Mosaic.

Adding to what Jane mentioned, the feature you refer to can also be done using Photoshop. Since Acrobat Reader Mobile is a PDF viewing and editing application, image editing cannot be done.
