Hope you are doing well. Thanks for writing in!
Would you mind sharing a few pieces of information for further investigation:
1. The app version of Acrobat Reader Mobile you use (go to Profile-> About Acrobat);
2. The OS [Android/iOS] and its version;
3. A screen recording of the issue.
When you get to Fill & Sign mode-> click the sign icon-> try clicking the 'minus' sign to the right of the signature to remove the existing sign, and then add a new one.
