The reason you are being redirected to Apple Store subscriptions is, the Acrobat Premium subscription that you have purchased has been completed through the Apple store and not from Adobe.

Would you mind sharing the error that you get when trying to cancel the subscription? A screenshot of the error would be great.
Also, you can try contacting the store provider through which you have subscribed [ play store if you use android device / app store if you use an iOS device ]
