Multitrack input only shows default device

Hi All,
I'm trying to get started with Adobe Audition 13.0.6.38 on Windows 10 1909 (18363.836). I've watched the Adobe tutorials, some you tube videos, and also some classes on Udemy to become familiar with the platform. One issue I am having that is different from many of the videos I have watched is that if I go into Preferences -> Audio Hardware and select a device, that is the only input I can select if I create a multitrack session using the Podcast template. Under Audio Hardware I see USB Headset Microphone, USB Webcam Microphone, a couple of virtual audio cables, and Stereo Mix (Realtek Audio). All USB devices are plugged into a 10 port AUKEY hub. If I select any one of these as a default and go to the Host or Interview track input, the only option I'm seeing is the default I selected under Audio Hardware. I was expecting to see every hardware device under Mono or Stereo that was available under the default Audio Hardware screen.
I eventually want to record Discord (primary) or Skype (secondary) gaming sessions and was planning on using the headset or webcam mic for myself and Stereo Mix (Realtek Audio) for other parties and have them go into separate audio tracks. Does anyone have any ideas on why I'm only seeing the default input device as an option for the track inputs? Second (less important), for my eventual use case, aside from a better desk mic and maybe mixer, do you have any suggestions for hardware that will make it go more smoothly in the future? I don't mind investing in more equipment if setup is easily repeatable and reliable.
