Resetting the layout (holding shift doesn't work!)

I've messed up my layout completely and everyone seems to suggest this hold shift + open trick. It doesn't work – at least, not for me.

I know I'm doing it properly, because when I try it, the new user tutorials pop up. But the layout is in the same messed-up state. I can't see anything about layout in Preferences either.

Does anyone have a solution? I've installed the most up-to-date version of Audition, and I've been using the software for years now.
