My organization is looking at moving to Captivate from Articulate 360. Is there a way we can convert our courses created in Storyline 360 to Captivate so that we are able to update them when needed?

You are not getting any answer, which may already let you suspect the answer: No.  Everything is different. If you are able to extract assets from your SL courses you can import them in the Project Library of a new Captivate project, but you'll need to start from scratch: design a custom theme (including object styles, master slides etc...), set up slides and use the Timeline panel, interactive objects...

If your courses do not have lot of interactions, you could record them with the Video Demo app included with Captivate (similar to Camtasia) to spare some time. However those parts will only lead to mp4 videos.
