I'm trying to create a spiral type shape like that shown below - for each of the two spiral arms I need the outer line of the spiral as blue and the inner line of the spiral as orange.  The inner part of the spiral arm doesn't want to be filled.

Any advice gratefully received!

After you get the spiral drawn and unsprung a little with the modifiers Monika mentioned, you could change weight of the stroke and the width profile to Width Profile 1 so that you get the tapered shape at both ends. Use Object > Path > Outline Stroke to change that path from a stroke to a shape. Change the stroke and fill for this shape so that the fill is none and the stroke is whatever for now. It can be black. Use the Scissors Tool (C) to snip the points at the ends to make 2 distinct paths.

Place this sketch in an Illustrator file, take the pen tool and draw the lines.

Thank you Monika - is there any way using the Illustrator spiral tool so that I can get smooth lines - rather than my drawing?

You can totally draw these with the spiral tool.

It uses some modifier keys which you will need to achieve this.

While the mouse is down when drawing the shape with the spiral tool, press Cmd (Mac) resp. Ctrl (Win) to get a different winding in your spiral.

You might want to practice the pen tool and then you might get your result quicker.
