Illustrator 2025 29.0.1 - New CMYK document has default RGB Swatches

I've recently upgraded to Illustrator 2025 29.01, when I create a new CMYK document the default swatch panel shows RGB colours, not the CMYK swatches like it should do. There is a warning symbol next to 'Colour mode: CMYK' which I've never experienced before. My colour settings are setup with RGB: SRGB IEC61966-2.1 / CMYK: Coated FOGRA39 (ISO 12647-2:2004) so it shouldn't have any issues.

When creating a new document, select a New document profile.

Then DO NOT change the color mode.
